A wonderful return to nature, with its flavour of yesteryear, this is a beer that was drawn from the wooden metal-circled barrels to fill so many mugs in our Flanders bars! Its bitterness comes from our hop fields scattered throughout the region. Brewed by infusions, it is an old-fashioned rising beer made with strong and hearty Flemish hops. Fermented using top yeasts, like the barrel brewers of yore and clamped like bonderised barrels. The 3MONTS beer is best drunk at the temperature of a cool cellar (like the ones in our Flemish houses, which are between 8 and 12°C).

It is a 100% natural operation which allow to keep all the flavours and taste our top fermented and bottle conditioned ales. A sample of every batch is sent for analysis to an official laboratory. It must achieve a gluten level under 20 ppm to be commercialized as "gluten free".

Appearance: Clear, golden color. Pours with a fine, persistent head.

Aroma: Beyond the yeasty essence, a subtle acacia and alpine meadow fragrance. Stable and persistent aroma.

The first taste is supple, balanced, almost round, pronounced with smooth, pollinated notes. Exceptionally pleasant aperitif beer. Thirst-quenching, finishes with a mild bitterness.

Beer and Food Pairings: Should serve especially well with a variety of vegetable-based tapas and light vinaigrette.

Rich golden color and a 3/4 inch head that holds. The head is foamy and bright white and the ne’er bubbles brilliantly. The aroma is complex with earthy tones, grass, malt and medium-rich yeast. The head is crisp, aptitude and refreshing and the flavor full and complex. Its a full bodied full flavored mixture of mostly Belgian yeast shadowed by some refreshing malt and orange peel and lemongrass notes. The lacing is thick and blanketous and the brilliant white color of it screams refreshment. Delirium Café, Brussels, Belgium writes: “I can’t believe this beer is gluten free. It has got to be the best I’ve have.”

By mixing young (one-year old) Lambic with older Lambic a second spontaneous fermentation in the bottle is obtained. The result is called GUEUZE.

The beer pours with a very fluffy, pillowy, pale colored head which is lightly hazed, gold-straw colored. The aroma is of ripe farmhouse cheese as well as notes of straw and wheat. The beer is extremely tart and sour up front and finishes with a solid astringency with hints of lemon and tart grapefruit flavours. Warming brings out a hint of acetic spiciness that boosts the complexity even a bit more. Very light and spritzy. Beer and Food Pairing: Cheese (buttery; Brie, Gouda, Havarti, Swiss, sharp; Blue, Cheddar, pungent; Gorgonzola, Limburger)

Gavroche was a generous and rebellious Paris urchin and a character in the Victor Hugo (1802-1885) novel “Les Miserable’s.” It is also a strong, amber beer, where the flavour of its top-fermentation yeast combines perfectly with the taste of the special malts. Fermented again in the bottle, the Gavroche beer should be served with care between 10 and 12°C.
